Texas Rub - brisket seasoning in true Texas tradition from Widowmakers BBQ
Texas Rub is a spice mix from Widowmakers BBQ developed for beef and larger cuts of meat. The base is black pepper, chili powder, and mustard, which together provide a robust and peppery profile with a distinct character. Cumin adds a warm undertone, and brown sugar balances the heat with a slight sweetness that caramelizes during cooking.
The seasoning is designed for brisket and beef brisket, where it builds a deep bark during slow smoking and grilling. It also works excellently on chuck roast, steak, wild boar roast, and elk meat. If you want a smokier profile on pork collar, it works well there too. Texas Rub can also be used as a seasoning in meat stews, stroganoff, and chili con carne.
How to use Texas Rub
As a rub, apply a generous layer over the entire piece of meat, ensuring all surfaces are covered. Dry marinate for at least 4 to 6 hours, or overnight in the refrigerator, before slow smoking or grilling. The coarsely ground spices build a bark with substantial flavor and texture typical of Texas-style BBQ.
