Campari Soda is the epitome of simple elegance: two ingredients that become a sparkling, bittersweet thirst quencher. It works equally well as a refreshing summer drink or a mouth-watering aperitif before dinner. Here's our precise version - feel free to adjust the proportions to suit your mood and occasion.

Ingredients

  • 6 cl Campari
  • 12 cl carbonated water (well chilled)
  • 1 slice of orange
  • 6 large ice cubes

Approach

  1. Chill the highball glass in the freezer for a few minutes or fill it with ice and water while you prepare the rest.
  2. If necessary, empty the cooling water and fill the glass with 6 large ice cubes for maximum cooling and minimum dilution.
  3. Measure 6 cl Campari with a jigger and pour directly over the ice.
  4. Add 12 cl of well-chilled sparkling water. Pour along the inside of the glass to preserve the bubbles.
  5. Gently stir 2–3 times with a mixing spoon so that the Campari and soda water mix without releasing the carbonation.
  6. Taste. If you prefer a lighter bitterness, top with another couple of cl of soda; if you want more bite, add 1–2 cl of Campari.
  7. Garnish with 1 slice of orange by placing it against the inside of the glass or on the rim.
  8. Serve immediately while the drink is icy cold and lively bubbly.
